A: Properly stored is can keep for up to 12 months or a bit longer. Best way to store is by cutting the wheel into portions no larger than 1/2 pound each, and wrap tightly in heavy-duty aluminum foil or plastic freezer wrap, or place inside a heavy-duty freezer bag.

A: Yes, the rind on the Parmigiano Reggiano is edible.

A: The rind is not removed from the cut portions.

A: The Parmigiano Reggiano is aged for 24 months. It is made in Italy by Emilia. The cut portion is cut in our warehouse, the other sizes are pre-cut and pre-packaged. The cheese is vacuum sealed.
